Traditional Maldivian cuisine, also known as Dhivehi cuisine, offers a wide range of tastes and sensations, from crunchy nibbles and street meals to sophisticated and pleasantly spicy curries served with wood-fired chapati bread.
Curries
Curries, which range from fish and chicken curries to vegetable curries and are rich in spices and unique tastes, are one of the most popular dishes in Maldivian cuisine. Mas Riha, a tuna curry with diced fresh tuna, coconut, peppers, and plenty of fresh chillies, is a favourite, while Kukulhu Riha, a chicken curry with a distinct blend of spices, is also a favourite.
Speciality dishes
Maldivian cuisine also includes a wide range of scrumptious speciality meals made with fresh fish, fowl, and beef, as well as fresh fruits and vegetables grown locally. Mas huni is a popular tuna salad with coconut that is traditionally served with chapati bread for breakfast. Street food
Small roadside cafés and busy marketplaces crisscross Malé’s motorcycle-packed streets, serving a range of tantalizing street cuisine and local specialities like bajiya – a sweet pastry loaded with fish, coconut, and onions – and kulhi borkibaa – spicy fish cakes.
Tuna
Another large part of Maldivian Cuisine is Tuna; which is often grilled or deep-fried, whereas other fish is typically cured, smoked, or sundried. Tuna curries utilize raw or still-soft processed tuna chopped into small bits. Processed tuna, also known as Maldive fish, is used as pieces or shavings and is dry-processed.
